Banana Bread Pudding Recipe
Bread pudding is a common sweet pudding recipe. This recipe gives it a slight twist with the addition of bananas to the recipe giving it a slightly different texture and flavour.
Banana Bread Pudding Recipe
Ingredients:
- Raisins - 25g (1 oz)
- Demerara sugar - 2 tsp
- Cinnamon - ½ tsp
- Eggs - 2
- Full Fat Milk - 450 ml (¾ pint)
- Bread - 5 slices (normally wholemeal but white is acceptable)
- Butter - 25g (1 oz)
- Dried apricots - 50g (2 oz), soaked
- Bananas - 2 thinly sliced
Method:
Pre heat the oven to 350F. Cut the crusts off the bread, thinly butter each slice and cut each slice into 4 squares. Thinly chop the apricots then place in a bowl along with the bananas and raisins and mix well. Mix the sugar and cinnamon, sprinkle approx. 1/3 over the apricot mixture.
Place half the mixture into a 1.1 litre (2 pint) ovenproof dish then cover with half the bread. Layer again with remaining apricot mixture and another third of the sugar mixture. Place the rest of the bread on top, butter side uppermost.
Beat the eggs and milk together, pour over the bread and sprinkle with the remaining 1/3 of the sugar mixture.
Bake for 35-40 minutes and serve warm with custard, cream or even thick milk.
