Chicken with Cucumber Salad

As with most salads this is an easy recipe to prepare.

Recipe Ingredients:

  • Cucumber - 1
  • Chicken breast - 150gm
  • Rice wine vinegar - 6 tbsp
  • Wasabi Horseradish - 2 tbsp
  • Soya Suace - 2 tbsp
  • Salt to taste


Method:

Take deep pan and add water until it boils. Add the chicken strips(Chicken has to be cut in to thin strips) and cook until the chicken is cooked through. Remove the chicken and cool the stock. Take a bowl and add a little water, salt & finely chopped Cucumber. Mix both of them properly and leave to marinade for 1 hour. Squeeze the cucumber removing the water and any "juice". Add chicken & the cucumber in a bowl. Add Soya sauce, vinegar and mix them well. The Salad is ready to serve.
