Lemon Tarts Recipe

This is a recipe for Lemon tarts which are a very traditional part of after tea treats. The trick is not to make them too "tart" or bitter and this recipe hopefully fits that bill.

Base Ingredients:
3 oz plain flour
2 teaspoons cold water
2 oz (salted) butter
3/4 oz icing sugar

Filling Ingredients:
1 egg
2oz caster sugar
juice of a small lemon


Method:

Pre heat oven to 375F. Grease deep "patty" tins. Sift the flour into a bowl, then rub in the butter and add the icing sugar. Add half the water and mix until a dough like consistency is achieved. Add more water if required.

Roll this mixture out onto a floured surface and cut into rounds which will line the patty tins. Bake for approx 10 minutes. Remove from oven and reduce heat to 350F. Whilst waiting for temperature to cool slightly, beat the egg, caster sugar and lemon juice together. Fill the pastry cases with the mixture and bake in the oven until set (the pastry should also be a lovely golden brown colour). Serve either hot or cold.
